Whew, yesterday was a doozy! My sweet little preschool class was wild and crazy yesterday. I'm not sure if it was a full moon or if it's because one mom sent in chocolate donut holes for the morning snack and then the birthday girl brought cupcakes for a treat after lunch. Those kids were all over the place!! Way too much sugar was consumed yesterday.
I got home and decided to "sit" for a minute.....and found myself under a cozy blanket in the horizontal position. I was pooped! I made the executive decision to not make dinner last night. Yep, I'm a rebel. The boys and I hopped in the car and got Rosa's to bring home. It was nice to not spend a couple hours in the kitchen.
So, my menu got pushed back a day. Tonight, we are having the cheddar meatloaves and that reminded me that I needed to post a recipe.
1 pound lean ground beef
2 large eggs, beaten
3/4 cup panko bread crumbs (could also use Italian breadcrumbs)
2 Tablespoons Italian parsley, chopped
coarse salt and pepper to taste
1 cup shredded cheddar cheese
3 Tablespoons ketchup
1/2 teaspoon garlic salt
4 green onions, chopped
Preheat oven to 450 degrees.
Spray a rimmed baking sheet with cooking spray. In a medium bowl, combine all the ingredients. Form into small loaves (I make 6 equal size loaves....they look almost like little footballs) and place on baking sheet. Top with additional ketchup (optional)
Bake loaves until they are cooked through, 15-20 minutes.
This recipe is super easy and my boys will eat it up! It's been a favorite around here for quite a while.

So this morning, I made a run through the Starbucks drive-thru and placed my order. Did you know that they no longer carry the Zucchini Walnut muffins? What???? I don't allow myself to order these often because they have about a full days worth of fat and calories in them....but they are sooo yummy. The guy told me that they are forever taken off the menu. If I was a picket/protesting kinda girl, I just might do that. Those were the best!

Anyone else so excited about Daylight savings this weekend? I have a friend that absolutely HATES the time change in the spring (and I equally hate the one in the fall) so we kind of have this running joke with each other. I am giddy just thinking about it staying light outside longer. Come on summer!!

I am off to get my hair highlighted. I'm so on the fence as to what to do with this head of mine. And shaving it isn't an option.
I started going lighter because I have an insane amount of grey hairs popping up. They show up so much more with darker hair but sometimes I feel it's too light. If I go in between then I feel it's just a dirty blonde color that feels dull. What to do, what to do?

What is your natural hair color? I too did highlights for years,and my hair was getting lighter and lighter and in the summer months got drier. So I decided to go back to my natural hair color (chocolate brown) and go once every 4 weeks to cover my roots. I trim the ends every other months and my hair looks and feels so healthy.
mine is a brown color too.....seems to get darker as I get older. I went ahead and kept with the hilight/lowlight combo this time around. I may get brave and go back closer to my more natural color. Fall maybe?? :)
I am also super pumped for day light savings! Glad I'm not the only one excited for it.
I say dark blonde/honey blonde lowlights. I get lowlights every time I go now. I love them and think they look natural.
Love all the recipes! Thx for sharing. Can't wait to try some of these. AND they don't look super duper hard since you know that cooking has always come so easy for me!!! Remember the egg shells in the cupcakes in college!!! Thankfully, I've come a long way but still like recipes that don't require an abundance of brain power. :) Tell that sweet almost 10 year old Happy Birthday for us this week!
I have a couple of clients that have the same dilemma, and we have actually lightened their root color, while keeping the highlights. And we have been able to only do highlights every other or (gasp) even every third visit!

Anyway, I started reading your story from the beginning and was just so wrapped up. I couldn't stop reading your honest, heart-wrenching, story. I decided it was time I left a comment. I just wanted you to know that I think you are incredibly brave and I am praying for you and your boys as you define what your family now looks like. I'm so sorry that this is your story now, but so glad that God has blessed you with a wonderful husband. Since reading this, I've been sure to relish in the small everyday moments with my sweet hubby and kiddos. (Being a SAHM w/ 3 kiddos 3 and under can be a tad overwhelming at times, thanks for reminding me to enjoy the simple things). Thanks for sharing your story.
